General Board / ASU Baseball

With all the downer news on the boards including my own unemployment I will highlight a bright spot close to my heart. My son is at ASU Baseball and the team is one of two undefeated teams in the nation. Won tonight to keep the string at 16-0. Some of you have met Alika, and he's a good kid. Proud of where he's going as a person. Would of course love the following for any baseball enthusiasts out there in the fishing world.

Food & Recipe / Oh yeah ... the Margarita

With spring on the way ... well ... it's time to drink here in San Diego  ;D ;D. Not like I don't do that all year.

Here's the simple Margee i like to make.

To preface, I like to "taste" my alcohol and I hate Margarita mixes. Too much sugar is a hangover waiting.

Blender - pour as much damn tequila as you want but keep in mind a 4:1 ratio of TQ and Tripple sec. I then use the minute maid Limeade (half can) and blend. Top with Gran Marnier and enjoy. The frozen limeade is the difference maker.

Food & Recipe / Killer Lettuce Wraps

Ingredients:

1lb ground chicken or turkey
5 or 6 of the small size portabella or sh!take mushrooms
1 onion (your choice)
1 bell pepper (i like the yellow or green with this)
1 can water chestnuts (these are usually hidden away on the bottom shelf of the asian section Vons Ralphs etc). I only use about 3/4 of the small can for this.
(optional) pinch of ginger (would recommend the minced type in jars)

Sauce:
2 Tbsp Hoisin Sauce
1 Tbsp Soy sauce
1 Tbsp Mirin
1 Tbsp Honey
1 Tbsp Peanut Butter

Prep all veggies down to a fine chop (or as small as you prefer)
cooked meat using EVOO till 1/2 way browned - salt and pepper. I then like to create a clear circle spot in the center of the skillet by pushing meat to the edge.
Add mushrooms to the center spot and cook down. Mix and create new clear spot.
Add onion and bell pepper and cook down but keep a little crunch. Mix and create new clear spot.
Add chestnuts (chopped fine) and ginger. Cook for a few minutes then mix everything together well.
I do add a bit more salt and pepper to taste.

Add sauce ingredients to a bowl and microwave for 1 min to breakdown the peanut butter. Mix well until PB incorporates with the sauce.
Add sauce to your meat mixture and stir well.

That's it! Serve with your favorite type of lettuce cups and enjoy a healthful meal.

Food & Recipe / Crab Cakes

Kinda winging the ingredient size but made these for the wifey tonight.

Bought a 1lb of snow crab (they are the smaller / thinner ones). Regret instantly but made due. The kings are sooooo much easier to harvest ugh.

On the skillet - chopped fine, sweet red onion, orange bell pepper and quarter clove garlic for a bit in olive oil (5 min on med-high?) added some green onion for the last few minutes. Just wanted to sweat the flavor and still have some crunch.
Added to bowl with crab meat. Salt / Pepper to taste
Added Mayo (your choice but good squirt maybe 1/4 cup) and one egg.
Added half cup panko / half cup season bread crumbs (more of a guess since i just pour in till I get the right consistency.
Mix till it's easy to make cakes. Add more crumbs if too wet.
Lined baking sheet with foil and placed cakes on sheet.
Broiler setting for 8 min then flip for another 8 mins. until golden brown

Sauce was half cup Mayo (we use the Kraft olive oil mayo), 1 tbls ketchup, 1 tbls mustard, 1 tbls sweet relish, 1 tsp pickapepper sauce. whisk together.

Delight!!! Enjoy!

Report on Paul's behalf ...

They headed towards the 425 but stopped short on a paddy they described as 3 garage doors in size. Hooked 3 dorado right away, and lost several more. Nothing more so they motored for a bit, then came back to the paddy again and it was loaded with Tuna this time. Had the school on the boat for an hour drift, probably ended up a mile or so away from the paddy, and had limits for 4 by 10a.

If you have the means to jump on a boat, the offshore action is still good. Largest 17lbs, 5 or 6 in the 10-12, and the rest were footballs 7-10.

Good luck - hope the intel inspires late season runs.

General Board / IRMA - Wow!

Been watching Irma all day. Quite possibly the most fascinating event on the heels of Harvey, which was fascinating in itself. Two incredible storms back to back, and completely different monsters. Harvey was a lurker, like to hang around an check things out. Irma's Hell on a flaming horse with a huge 70 mile wide buzz saw that will blast anything in her way. At one point today, with her wind speeds, she was literally comparable to a 70 mile-wide EF 5 Tornado. Irma will be studied and go down as a once in a 100yrs storm.

The structure and intensity is so nuts. Dropsondes had 195mph sustained and 235 max gusts at one point today. NHC didn't make it official, but they will after months of data collection. It will be one to rival Patricia. Hit Barbuda head on with all its full fury. Barbuda fully exposed in eye - now venturing back into East eye-wall. there will be nothing left on that Island.

Scary part - much warmer waters and low sheer still ahead (FUEL). Heading for Cuba and US. Where will it go?
