Easy Chicken Adobo

I use the party pack from Ralphs - half drumstick half thighs.

In a cooking pot (spaghetti type) I add all the chicken, Soy Sauce, white vinegar equal parts about 1 1/2 cup each (I use asian white vinegar it's lower acid) then add water till it covers the chicken
Add pepper corns (generous), bay leaves, lots of garlic, and I use brown sugar (maybe half cup?), with some Cayenne pepper

Stir and set in fridge for 2-3 hours.

Place on stove and bring to boil and cook 15 min. Reduce heat to simmer for another 30min.

Plate with rice and whatever veggies you like. I do broccoli and carrots. Sauce may be used on rice too. Some people like to reduce the sauce further when chicken is removed.

SUPER EASY! Enjoy!

I love adobo!! Have you tried it with potatoes or quail eggs? Yum!!!
